Spanish Roasted Red Pepper Salad with Garlic and Olive Oil, Spanish Tortilla,, and Chorizo Filled Dates Wrapped in Bacon

We’re having an anniversary party! The Dinner Sisters have been around for a whole year and we think that’s reason to celebrate. What better way to have a party than Spanish tapas, those small bites that go so well with a festive beverage. Betsy’s favorite, bacon-wrapped dates, show up with a twist. A Spanish tortilla is on the menu to serve a crowd (and won’t break your budget). Rounding out the party, we have roasted red peppers with garlic and olive oil that just might be the best pantry-friendly appetizer we’ve found. We’ve had such fun this past year of podcasting with you. We can’t wait for another.

Spanish Roasted Red Pepper Salad with Garlic and Olive Oil: French Revolution Food

Roasted red peppers, a healthy glug of olive oil, and plenty of garlic make our new go-to hot appetizer. We couldn’t get over how quickly and easily this came together and how good it was with a crusty loaf of bread.

Tips:

  • A smaller jar of roasted red peppers will likely make one recipe.

  • Do be careful with the hot oil- carefully stir the peppers into the oil and garlic.

  • We think this would be delicious with soft goat cheese, maybe some olive tapenade for an easy, casual cocktail party.

Spanish Tortilla : Amanda Hesser at Food52

Our theme this week may be party dishes, but it doesn’t mean recipes with a ton of different ingredients. A Spanish tortilla is just eggs, potatoes, onions, olive oil, and a little cheese. You end up with a gorgeous golden pan of tortilla that can easily feed a crowd. Tasty and easy on the wallet.

Tips:

  • The potatoes need to be cooked all the way through before you mix them with the eggs, but not fall apart soft. A knife stuck in the boiling potatoes should slide out easily.

  • Budget time to allow the potatoes to cool a bit so you can peel and slice.

  • We mentioned before but this is a generous recipe. Honestly, this could feed eight for dinner comfortably, or more when cut in appetizer portions.

  • Next time we’re going to make sure to try the tortilla with garlic mayonnaise as Amanda Hesser suggests.

Chorizo Filled Dates Wrapped in Bacon: Food and Wine

A bit of chorizo tucked into a date, wrapped in bacon- it doesn’t get any more decadent. Betsy loves a bacon wrapped date and agreed that adding chorizo gilded the lily. Make this for a party where you really want to go all out. We’re thinking a little bubbly wouldn’t be a bad thing, either.

Tips:

  • Remember to take the pits out. (Let’s just say this wasn’t obvious to everyone.)

  • While the recipe yields 24, you could make as few or many as needed. Just cut up the appropriate amount of chorizo and bacon and you’re all set. Sure, these would be great at a party, but also stellar for a Netflix marathon and your sweetheart.

  • Betsy successfully made these on her grill. The smoky flavor was an added bonus, flavor-wise. Make sure you have a sturdy, rimmed pan to grill them or a spray bottle at the ready for any potential grease fires.

A fresh and sparkly drink for summer or, like now, when you’re wishing it’s summer. Red wine, lemon-lime soda, sweet vermouth, and citrus were a delightful cocktail for our tapas.
