Episode 45: Warming Vegetarian Winter

Saag Paneer, Tangy Lentil Sloppy Joes, and Sauerkraut Latkes

We’re in the thick of winter, which means wanting food that warms you right up. Why not try some vegetarian dishes that do just that? Saag Paneer, Lentil Sloppy Joes, and Sauerkraut Pancakes all hit the spot. Even better, if Meatless Monday are part of your New Year’s goals we have almost a whole month for you to try. (Check out our recipe index for the fourth.)

Saag Paneer: Food Network

One of Betsy’s favorite take-out foods, we were excited to try this at home. Bouncy fresh paneer cheese is marinated and combined with pureed spinach, garam masala, ginger, onions and yogurt. Here’s a comfort food recipe with dimension.

Tips:

  • Betsy bought the paneer at her local Indian grocery store. She found a variety of paneer and fresh naan. Worth trying to find one in your area!

  • Kate made the paneer and was very successful. The directions were clear and accurate. She made the cheese the night before which worked well, timing-wise.

  • Serve with basmati rice or naan for a complete meal. A little yogurt raita on the side wouldn’t get a side glance from us.

Tangy Lentil Sloppy Joes: Vanilla and Bean

Many an American kid growing up in the era of Manwich ate sloppy joe’s growing up. Instead of hamburger in a tangy tomato sauce, this recipe substitutes lentils and vegan sauce ingredients for a completely vegetarian version. We were happily surprised to find we liked this recipe just as much as the meaty sandwich.

Tips:

  • Make sure to buy French lentils, or any variety that will keep its shape when cooked. The texture of the finished dish is key.

  • Betsy detoured from the sandwich route and served this over rice. It was a hit! A new way to have a rice and beans meal.

  • If you aren’t vegan or vegetarian, feel free to substitute traditional Worcestershire sauce. We also used olive oil instead of coconut oil successfully.  

Sauerkraut Latkes: Taste of Home

For those keeping track at home, this is our fourth dinner pancake! What can we say, Kate likes a pancake. A savory cake to make for dinner with shredded potato, apple and sauerkraut? No regrets adding to our growing list.

Tips:

  • Kate halved this recipe with no problems.

  • Sauerkraut not your favorite? We found the taste to be very mild. That said, if you are a sauerkraut fan, we might try not rinsing the cabbage before adding it to the batter.

For the Instant Pot:

  • Dorothy suggested nudging the top of the pot if the seal is taking a bit long. She’s also a big fan of using her air fryer accessories in the Instant Pot.

  • Mallory likes these stackable stainless steel containers to make multiple dishes at once.

  • Cara, Dorothy and others thought getting the glass lid was worth it.

About the Caldo Verde Soup:

  • Many listeners made the soup with different varieties of sausage.

  • A Portuguese listener was skeptical of the directions to blend the sausage. If you’re going for authenticy on this one, maybe leave the sausage for the end.
