The Best Spinach Lasagna and Zabaglione

A big dish of lasagna is always a labor of love. Assembling all the ingredients, making a sauce, dealing with the noodles, all can be a lot of work. This spinach lasagna falls right into that tradition. Yet, we have to admit, we’ll make this again. The pasta, the sauces, the cheese...what more can we say? A little dessert at the end gilds the lily with rich egg yolks, sweet wine, and berries. A fitting send off into hiatus and celebration of ten fantastic episodes.

The Best Spinach Lasagna: Serious Eats

Brace yourselves, this is an epic lasagna. Twelve layers, two pounds of ricotta, and more spinach than we’ve ever had in our fridge at one time. But the final dish? Stunning. A vegetarian lasagna to finally brag about. 

Tips: 

  • Kate halved this and it went very well. 
  • Divide and conquer to avoid angry crying. Betsy made this in the morning and then baked it the next day. Kate broke up the steps over the course of one day.
  • Kate made her own pasta sheets. Betsy used no-boil noodles. Both were very good. 
  • Try to stick to the directions and ingredients. Everything is done for a reason!

Zabaglione: Food and Wine

A dessert after that lasagna needs to stand apart yet can’t weigh you down. Light but rich, zabaglione is almost a mousse but not quite a sauce. Pair it with some berries in a little glass and you have an elegant dessert to wrap up a dinner party. 

Tips: 

  • Marsala wine, egg yolks, and sugar are the only ingredients. If you don’t care for any of those, this may not be the recipe for you. 
  • Whisking over simmering water sounds like it might be a pain. But we didn’t seem to mind. 
  • Make sure to stop cooking before the sauce gets too thick. You could scramble the eggs.
