
Baking a cake for your family and loved ones can be an act of love -or frustration if you don’t have a good recipe. Odette Williams gives us great recipes to make cakes that aren’t necessarily fancy but are delicious and packed with love. Her mantra of baking for the people you love struck a chord with us. We love nothing more than a little bite of something sweet made better by sharing with familty and friends. This episode we not only made some fantastic cake (Those madeleines! The lemon yogurt cake!) but had a chance to get some tips and techniques from Odette herself. Happy baking!
Betsy made: Lemon Yogurt Cake, Tangy Olive Oil Cake, Very Vanilla Cake. She liked the ability to mix and match toppings and flavors. The Very Vanilla could have buttercream, easy powdered sugar, or layered up into a celebration dessert. She can't wait to make variations of the yogurt version for school time snacks.
Kate made: Chocolatey Chocolate Cake and Madeleines. The Chocolatey Chocolate recipe was moist, rich with chocolate and easy to whip together. Her recipe made tender, gorgeous Madeleines that made me very popular with my partner, James. Madeleines weren't the simplest in the book, but the directions were clear and the flavor was worth the effort.
Odette also answered questions from our listeners about ingredient substitution and dealing with a wonky oven. We learned that an oven thermometer is our friend and that spelt is a great flour for baked goods.
