Tara cooked: Lazy Girl Chicken Enchiladas with Cumin Crema. Everyone loved it. I thought I would have a half pan left but everyone had seconds. My boys even ate it for breakfast the next day! I also cooked Pavlova, Romanesco, cookie bars (x2 amazing!), carnitas, balsamic onions, guac, green rice bowls, Larb Bowls (I went a bit crazy with this book).
Betsy cooked:Southwestern Sweet Potato with Quinoa Chili.I have to tell you, I did a fantastic hot yoga class in the late morning and new that I was going to go back home and have a nice bowl of this healthy chili and just felt…like i was living my best life. I made the Perfect Roasted Potatoes and I made the Winter citrus salad, which I enjoyed.
Kate cooked: Mocha Chocolate Chunk brownies. It was perfect timing. I’d been traveling the week before and was in desperate need of a chocolate fix. The Sesame Misa Market salad was the winner. I loved that I could find everything at the store even in the middle of January. It was refreshing, delicious, and made a perfect light lunch.
